Jam-Filled Muffins

One of my favorite recipes growing up was jam-filled muffins. The recipe came from my grandma and my mom would make it for us all the time. It's a really quick recipe and I remember my mom whipping up a batch of these muffins in the morning before school to pack in our lunches. They're so good and I like that I can switch up the jam for a new flavor every time, although strawberry is a classic for me.



Here's what you'll need

1 1/2 cup flour

1/2 cup sugar

2 tsp baking powder

1/2 tsp salt

1/4 cup shortening (butter or oil)

1 egg

1/2 cup milk

jam of choice

cinnamon and sugar


Here's what to do

  • Sift together your dry ingredients

  • Combine the shortening, egg, and milk in a separate bowl

  • Fold the dry ingredients into the wet ingredients

  • Lightly grease a muffin tin and put a scoop of batter into each cup

  • Put a dollop of your favorite jam in the middle of each and cover with more batter leaving space at the top of the cup for it to rise.

  • Sprinkle with a little cinnamon and sugar

  • Bake at 400° for about 20-25 minutes until they are golden

  • Let them cool in the muffin tin for one minute and then transfer to a wire cooling rack for about five minutes
