Not-So-Sleepy Hollow Latte

Fall drinks are the best drinks and I've got a pretty great one for you this month! A pumpkin latte with a twist that's sure to keep you wide awake, but oh so cozy. I wanted to draw on the imagery of the classic Sleepy Hollow story: the Headless Horseman's flaming pumpkin, a sinister wooded setting that probably featured many sugar maple trees (the state tree of New York where the story takes place), and a mixture of sweetness and spice that the autumn season in known for. Mix them all together and you have the Not-So-Sleepy Hollow Latte.

Start by combining milk, canned pumpkin, and brown sugar on medium heat stirring occasionally for about 10 minutes or so.


Remove from heat and stir in the vanilla, maple syrup, and pumpkin pie spice.


Froth this mixture either with a milk frother or in a blender.


Pour the milk mixture into your mug(s) and add the espresso (or very strong coffee).


Top with whipped cream, a sprinkle of cinnamon, or whatever you like.
